Castas: 100% Arinto from the Azores.
Concept: Arinto dos Açores is an autochthonous grape variety exclusive to the Azores islands, sharing only the name and good acidity with mainland Arinto.
Tasting notes: Clean, citrine yellow color. Pure mineral aroma, citrusy with notes of grapefruit. Tense, fresh attack with a very present minerality and acidity, good persistence and saline notes.
Origin of the Peak
Soils: Volcanic rocky and biscuit-like soils formed between 500 and 2,000 years ago. Viticulture: A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the volcanic mountain of Pico, the vines are planted in the rock crevices, next to the sea, where you can hear the "crab singing," because this is where there is the most sun and heat. A proximity of, sometimes, only a few meters, which necessitates protecting the vines with walls (corrals) from the strong, saline winds of the Atlantic.
Winemaking: Selective manual harvesting in 20kg baskets, whole bunch pressing, racking after 12 hours to 600-1000L horizontal fermentation tanks.
Stage: 10 months on fine lees
And the second edition has an additional 48 months of extended aging in the bottle.
Gastronomy: Fresh, very mineral and saline. An ideal partner for oysters, barnacles and shellfish. Also works well with grilled fish, salads and fresh seafood.
Storage and serving: Store at 6-8ºC to be served at 10ºC, and to be drunk at 12ºC.
Alcohol: 12.0% Vol.
