Castas: 100% Verdelho "the Original", from the Islands.
Origin IG Azores
Concept: Verdelho is an indigenous grape variety from the Azores, distinct from the "Verdelhos" of the mainland and shared with neighboring Madeira. This Verdelho is "the Original," the one from the islands, the one with freshness, salinity, minerality, and the unique aroma that made Verdelho... Verdelho!
Tasting notes: Fresh, mineral and saline attack, it has the essence of the Azorean grape varieties and terroir, but with a slightly more intense aroma, adding to the grapefruit notes touches of acidic tropical fruit such as passion fruit and guava. It's not Verdelho-Gouveio, it's not Verdelho-Verdejo, it's Verdelho-Verdelho, the Original.
Volcanic loam and biscuit soils formed between 500 and 2,000 years ago.
Viticulture: A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the volcanic mountain of Pico, the vines are planted in the crevices of the rock, next to the sea, where you can hear the "crab singing," because this is where there is the most sun and heat. A proximity of, sometimes, only a few meters, which necessitates protecting the vines with walls (corrals) from the strong, saline winds of the Atlantic.
Winemaking: Selective manual harvesting in 20kg baskets, whole bunch pressing, racking after 12 hours. Spontaneous fermentation in 600-1000L horizontal tanks.
Aged for 10 months on fine lees and 48 months of extended aging in the bottle.
Gastronomy: Fresh, very mineral and saline. An ideal partner for oysters, barnacles and shellfish. Also works well with grilled fish, salads and fresh seafood.
Storage and serving: Store at 6-8ºC to be served at 10ºC, and to be drunk at 12ºC.
Alcohol: 12.5% Vol.
